2017 Flor (Yellow Wine Blue Sky) (500mL)
Our vin jaune-inspired wine is created over three years under a veil of flor yeast. We’ve been playing with old barrels in a small shed over several years now to achieve this style and 2017 is a powerfully sherried example. Characteristic Jura flavours of cashews and almond butter have been paired with a hint of remaining effervescence, adding just a touch of lift. This style of wine practically demands a raw cheese, an alpine backdrop and a brisk hike home in the snow (note: cold rain will do, depending on your current altitude).
100% Savagnin. Fermented one month on skins. Three barrels transferred to a shed away from the winery and left to continue fermentation under a layer of flor yeast for nearly three years.
