In 2018, our Swaby Vineyard was 30 years old and we had been making wine with those grapes for 10 years. Back then we noted flinty aromas and a nuanced tired palate. After 15 months in barrel and nine or 10 months of bâttonage we have a single-barrel version of Swaby that has achieved everything we imagined she might: aged with grace, clean expression and astounding length. The flavours that were once green apples and boiled sweets are now are peaches and cream with a touch of gunsmoke and acidic pucker. In 2018 she was a little shy, but today far more mature, and prepared to mature far further. This was then and is now a wine we would make over and over again.100% Piccadilly Valley Chardonnay, wild yeasts, 15 months in 100% new French oak, 9-10 months bâttonage, 2 years in bottle before release, only one barrel produced.
