2019 Yellow Wine Blue Sky
The spirit of this lovely Savagnin vineyard lives on powerfully in the last of our flor-aged Yellow Wine Blue Sky from those venerable vines. Like all good learning curves, this one has been steady and inexorably in an upwards direction. To date, this is surely our finest and prettiest – a fabulous sunset gold in the glass with flavours of that part of the apricot that hugs the pip or a marmalade with lime and Christmas spices. Focused and deep. Would go fabulously with a comté cheese or heady soufflé, but can genuinely just be sipped on its own. As farewells go, this one is full of warmth and happy memories. Fermented one month on skins. Three barrels transferred to a shed away from the winery and left to continue fermentation under a layer of flor yeast for three years.
