Our cidre is in its 4th year, made with seven heritage apple varieties from a block in Tasmania, and grown on a small nearby property that we can practically see from our deck in Basket Range. We pick in February, pop it into the cold store until grape harvest, and then it re-emerges to join in with the fermentation gala when there are yeasts aplenty floating throughout the winery. Cidre has been a grow-as-we-go adventure for us, and this year has proved to be a strong step forth in our evolution – slightly more residual sugar and slightly fewer solids, yielding an approachable, easy-to-love, summer favourite. An umami finish with juniper at the back palate and notes of star anise and five spice give it just enough complexity to sway the cidre snobs at the backyard gathering.
