Several vintages ago now we shifted gears away from Provençale-style rosé to saignée preferring this Tavel-esque early glimpse into the free-run Pinot Noir of the vintage. Musky and food-loving the flavour-profile of this year’s Saignée is meaty roses strawberries and Negroni with a soft rolling mouthfeel atop an intense linear acidic focus. While we may never say never to rosé in our future a vintage like this makes us pretty certain we’ll always say forever to our Saignée.
