Cabernet from biodynamically farmed 50 year old dry grown vines from Blewitt Springs grown on pure sand.
Our second Cabernet Sauvignon from this truly iconic vineyard (the first was released in 2017 as Weinkauf), this is a wine deep with blueberry and leather aromas. There is a round, soft, fleshiness to the behind the chalky tannic structure, all on account of whole bunches.
To the best of our knowledge, this is one of only two whole-bunch Cabernet auvignons in Australia (happy to be corrected over a glass or two), only 3 barriques made, handpicked, 100% whole bunch, wild-yeast fermentation, one month on skins, 10 months in 30% new French oak, unfiltered & unfined.
